Meats under 1″ Thick:
Sprinkle both sides lightly with Jocko’s Mix seasoning before placing on prepared pit of oak coals. Cook the meat for approximately 10 minutes on each side.

Meats 1″-2″ Thick:
Sprinkle a heavier amount of Jocko’s Mix seasoning on this thicker cut of meat. Cook the meat for approximately 15-20 minutes on each side.

Meats 2″-3″ Thick:
Sprinkle a generous amount of Jocko’s Mix seasoning, covering all surfaces well. Cook the meat for approximately 25-30 minutes on each side.

Meats 3″-4″ Thick: (Sirloin, Tri-Tip, Prime Rib Roast)
Pour Jocko’s Mix seasoning into a pan and roll the meat into it, covering all surfaces well. Cook the meat will be 1-2 hours.
